Baking and decorating wedding cakes is a multi-stage process that begins mid week for Friday and Saturday weddings.  Below is a day by day outline of how sugar, flour, and eggs are formed into the wedding cake of your dreams!

2 - 3 Weeks Before Your Wedding - Any fondant or gum paste decorations such as bows, ribbons, monograms, and sugar flowers are started.  Many of these hand made items are made in pieces that must dry for several days between stages before being assembled.

Wednesday Before Wedding - Cake Layers are baked, cooled, wrapped, and refrigerated. Layers are refrigerated overnight so that they do not break, crumble, or crack when they are stacked together to form individual tiers.  Each wedding cake tier is made up of a minimum of 3 individual layers of cake.
